Eating healthy is a smart thing to do. It minimizes the insults your body will have to overcome as it ages. "Heart Smart" is the way to look at it. And this bread is heart smart for many reasons. It's made with oil (and only a pinch of it), the "egg" can be yolkless, or even eliminated. And the whole wheat flour gives it a solid texture and extra fiber.
A "character" bread is always wonderful with a salad, used for grilled cheese (Pam for frying, and fat-free cheese if it's to be healthy/heart smart), or as sandwiches. Whole-wheat Spinach Bread is a perfect setting for a Tuna or Egg Salad Sandwich.
Consider this when planning appetizers for your next gathering. Spread slices with cream cheese, and top them with various trims: pepperoni, grapes, carrots, shrimp, feta cheese squares, cherry tomatoes. Or bake the bread in mini-pans and make miniature sandwiches cut into triangles and decorated with a toothpick kabob of cheese, olives, pickles, etc.
